Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 cup buttermilk
- 2 tablespoons unsalted butter, melted
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract
- For Lemon Bar Topping:
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 2/3 cup water
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 2 egg yolks
- 2 tablespoons unsalted butter
Instructions:
Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl
First, beat the egg in a different bowl
Then, add the melted butter, buttermilk, lemon zest, lemon juice, and vanilla extract
Combine well
Add the wet ingredients to the dry ones and mix them together just until they are mixed
It's okay if there are lumps; don't mix it too much
Set a griddle or nonstick skillet over medium heat and add a little butter or oil to smooth it out
Add 1/4 cup of the pancake batter at a time to the hot griddle
Start cooking when the top starts to bubble
Then turn it over and cook until both sides are golden brown
Do it again with the rest of the batter
In a saucepan, mix sugar, flour, and salt together with a whisk for the lemon bar topping
Stir in the water, lemon juice, and lemon zest one little bit at a time
Stir the mixture all the time over medium-low heat until it gets thick and starts to boil
In a small bowl, beat the egg yolks just a little
To temper the yolks, slowly whisk in a small amount of the hot lemon mixture
After that, add the egg mix back to the saucepan and whisk it again
Stir the mixture all the time for another two to three minutes, or until it gets even thicker
Take the pan off the heat and add the butter
Mix it in until it melts and fills the pan
Put the lemon bar topping on top of the pancakes and enjoy!
