Ingredients:
- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1 large egg
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 1/4 cup unsalted butter, softened
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
- Cream cheese glaze:
- 2 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 2-3 tbsp milk
Instructions:
In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt
In another bowl, combine buttermilk, egg, melted butter, and vanilla extract
Pour the wet mixture into the dry mixture and stir until just combined
In a separate bowl, mix softened butter, brown sugar, and ground cinnamon to make the cinnamon swirl filling
Heat a griddle or non-stick skillet over medium heat and grease with a little butter or cooking spray
Pour 1/4 cup of pancake batter onto the griddle for each pancake
Add a spoonful of the cinnamon swirl filling on top of each pancake and swirl it with a toothpick or skewer
Cook until bubbles form on the surface, then flip and cook until golden brown
For the cream cheese glaze, beat together cream cheese, powdered sugar, vanilla extract, and milk until smooth
Drizzle the glaze over the cooked pancakes
Serve hot and enjoy!
