Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup vegan butter, softened
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 flax egg 1 tablespoon ground flaxseed + 3 tablespoons water
- 1 teaspoon vanilla extract
- 1 cup vegan rainbow M&M candies
Instructions:
Preheat the oven to 350F 175C
Line a baking sheet with parchment paper
In a small bowl, prepare the flax egg by mixing the ground flaxseed and water
Let it sit for 5 minutes to thicken
In a medium bowl, whisk together the flour, baking soda, and salt
In a large bowl, cream together the softened vegan butter, brown sugar, and granulated sugar until light and fluffy
Beat in the flax egg and vanilla extract until well combined
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the vegan rainbow M&M candies
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie
Bake for 10-12 minutes, or until the edges are lightly golden
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
