Ingredients:
- 4 large eggs
- 1 cup chopped kale
- 1/2 cup diced onion
- 1/2 cup diced bell peppers
- 1/2 cup grated cheese cheddar or your choice
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon olive oil
Instructions:
Preheat your oven to 350F 175C
In a skillet, heat the olive oil over medium heat
Add the diced onion and bell peppers to the skillet
Saut them until they become soft and translucent
Add the chopped kale to the skillet and cook for an additional 2-3 minutes until it wilts
In a mixing bowl, whisk together the eggs, milk, salt, black pepper, and paprika
Stir the sauted vegetables and grated cheese into the egg mixture
Pour the mixture into a greased pie dish or baking dish
Bake in the preheated oven for about 30-35 minutes or until the quiche is set and the top is golden brown
Allow the quiche to cool for a few minutes before slicing and serving
