The flavors of warm cinnamon and juicy peaches come together in these delicious Paleo Peach Cobbler Muffins, which are free of grains and dairy.
Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 eggs
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 2 ripe peaches, diced
- 1/2 teaspoon cinnamon
Instructions:
Preheat oven to 350F 175C and line a muffin tin with liners
In a large bowl, mix almond flour, coconut flour, baking soda, and salt
In a separate bowl, whisk together eggs, maple syrup, melted coconut oil, and vanilla extract
Add wet ingredients to dry ingredients and mix until well combined
Fold in diced peaches and cinnamon
Scoop batter into muffin tin, filling each cup about 3/4 full
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean
Allow muffins to cool before serving
