This Vegan Creamy White Chili is a flavorful and hearty alternative to traditional chicken chili. Jackfruit adds a meaty texture, while coconut milk creates a creamy base. It's packed with protein and perfect for a cozy meal on a chilly day.
Ingredients:
- 1 cup white beans, soaked and cooked
- 1 cup jackfruit, shredded
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can 14 oz coconut milk
- 1 cup vegetable broth
- 1 can 4 oz diced green chilies
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon oregano
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions:
Put onions and garlic in a large pot and cook them until they become clear
Jackfruit shreds, cumin, chili powder, and oregano should all be added
Bring it to a boil
Put in coconut milk, diced green chilies, cooked white beans, and vegetable broth
Mix well
Simmer for 20 minutes, stirring every now and then
