Ingredients:
- 1 lobster, cooked and meat removed
- 8 oz pasta shells
- 2 ears of corn, kernels removed
- 1/2 cup mascarpone cheese
- 2 tbsp chopped chives
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
Get the oven ready by heating it up to 400F 200C
Put the corn kernels on a baking sheet and season them with salt and pepper
After the oven is hot, roast the corn for 15 to 20 minutes, or until it turns golden brown
Follow the directions on the package to cook the pasta shells until they are al dente
Remove the water and set it aside
Set a pan on medium heat while you wait
Bring the lobster meat back to a boil and then add the cooked lobster meat
Put the lobster in the pan with the roasted corn kernels and mascarpone cheese
Mix everything together by stirring until the mascarpone melts
Add the cooked shells and chopped chives
Add pepper and salt to taste
Serve hot, and if you want, top with more chives
