Ingredients:
- 1 cup quinoa
- 2 cups mixed berries strawberries, blueberries, raspberries
- 1/4 cup honey
- 1/4 cup chopped almonds
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- Pinch of salt
- Greek yogurt optional, for serving
Instructions:
Use cold water to rinse the quinoa
Put quinoa, 2 cups of water, and a pinch of salt in a saucepan
Once it starts to boil, lower the heat, cover, and let it cook for 15 minutes, or until the quinoa is done and the water is absorbed
Put coconut oil in a different pan and heat it over medium-low heat
Toast until golden brown, then add the chopped almonds
Mix berries and toast almonds together in a pan
Add vanilla extract and honey to the berries
For three to five minutes, stir the berries and cook until they are warm and a little soft
Use a fork to fluff up the cooked quinoa, then divide it up into bowls to serve
Mix the warm berries and nuts together and sprinkle them on top of the quinoa
If you want, you can serve it with a dollop of Greek yogurt
