These cute sand dollar cookies are ideal for a nautical-themed party! They'll transport your taste buds to the seashore with a buttery almond-vanilla base and a touch of graham cracker and almond decoration.
Ingredients:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup finely crushed graham crackers
- 1/4 cup finely chopped almonds
- Powdered sugar, for dusting
Instructions:
Mix the flour, baking powder, and salt together in a bowl with a whisk
In a different bowl, beat the sugar and butter together until they are light and fluffy
Add the egg, vanilla extract, and almond extract and beat until everything is well mixed
Slowly add the dry ingredients to the wet ones and mix them together until they are just combined
Cut the dough in half and roll out each half into a disc
Cover with plastic wrap and put in the fridge for at least an hour
Warm the oven up to 350F 175C and put parchment paper on baking sheets
Spread out one disc of dough on a floured surface until it's about 1/4 inch thick
Cut out shapes with a sand dollar cookie cutter and place them on the baking sheets that have been cleared
In a small bowl, mix the crushed graham crackers and chopped almonds together
To make a sand dollar shape, press a small amount of the graham cracker and almond mixture into the middle of each cookie
After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden
Let the cookies cool for a few minutes on the baking sheets before moving them to a wire rack to cool all the way
After the cookies have cooled, sprinkle them with powdered sugar to make the sand dollar design stand out
Use the other disc of dough to do the same steps of rolling, cutting, and decorating
